    A petrin, also known as a dough table or kneading trough, was traditionally used in French kitchens for kneading, proving (rising), and storing bread and pastry dough.  Petrins are characterized by a flat surface for kneading and a trough or box underneath for holding the dough.  They often feature a removable top and are typically made of oak or walnut.
